Zucchini Spaghetti
What is the recipe story?
When we wonder what to eat for dinner, we always have this meal in mind because it is quick to make, easy to prepare and nutritious, saturating our body sufficiently. If you decide to do it, trust me, you won't regret it. A small note: if you are entitled to alcohol, it is worth consuming this dish with a glass of wine, then in my opinion it tastes best. The recipe is for 2-3 people and the time needed to make it is about half an hour
What are the ingredients?
- π 1 zucchini
- π 1 can of chopped tomatoes
- π 1-2 onions
- π 1 bunch of parsley (keep few pieces for decoration)
- π 10 spring onion leaves (keep last one for decoration)
- π 2 cloves of garlic
- π 100 g of grated parmesan
- π extra virgin olive oil
- π 200g of spaghetti noodles
- π 100 ml of white wine
- π salt
- π pepper
- π hot pepper

How to prepare it?
π Before you start, make sure all vegetables are washed and ready for action. Next, start by organizing the recipe station. Place slicers and small bowls in a strategic place where you will put the chopped ingredients. Find a good knife and be careful not to cut yourself if you sharpen it too much. Okay, time to start playing.
π Peel Mrs. Zucchini from the skin and then cut it lengthwise in half, then in half again and cut the strips created in this way into 1 to 2 centimeter pieces, depending on how thick you like. The thicker they are, the longer they will have to stay in the pot / pan during cooking. Put the chopped pieces in a small bowl.
π Peel & chop the onions into small dice. I like a lot of onions so for two persons I use two but maybe you prefer less so go ahead and cut only one. Put the chopped pieces into next small bowl.
π Squeeze or mince two garlic cloves and put them into next small bowl.
π Carefully open the can of chopped tomatoes and pour its contents into another bowl.
π Separate some of the leaves from the parsley and finely chop the resulting pieces and throw them into the next small bowl.
π Slice the spring onion leaves and add to the next small bowl
π Grate the parmesan cheese or cut it into very thin pieces and put it in another bowl
π If you prefer the spice of hot pepper its fresh equivalent, cut it into small cubes and add to the bowl with garlic
π Time to heat up the pan. I always use 80% burner power. Depending on what equipment you have, always be careful not to burn yourself. Okay, so let's start. Pour the olive oil into the heated pan so that it covers the entire surface of the pan. Then throw in the onions and garlic (with hot fresh pepper - if you prefer it instead of the spice) and fry until the onion is translucent.
π Then add Mrs Zucchini. Mix it in the pan with onion-garlic-olive juices. Zucchini likes more company, so add some parsley and spring onions. Stir again while frying
π Keep an eye on the pan to make sure nothing is burning. If so, reduce the fire. It's time to toss in the chopped tomatoes along with the sauce that was in the can. Mix it all up. Reduce the burner power to about 50% and add the wine. Make sure there is no lid on the pan or pot, depending on what you are using.
π After adding the wine, it's time to season our work. Add salt and pepper and hot paprika. I suggest you pour in small portions, mix and try in this way you will make sure that you do not overdo it with any of the spices. Mix the food well. From this moment, we reduce the dish so we wait until the water evaporates during cooking and the sauce thickens. It takes more or less 10-20 minutes. The rule is watch your work.
π Time to cook the spaghetti noodles. Take a pot, pour water over it and cook until aldente according to the instructions on the pasta package. After the pasta is cooked, drain it.
πIt's time to invite our other half and put some delicious spaghetti on the plate. We start by putting the pasta on a plate and then, using a ladle, pour the sauce over the pasta. Sprinkle the dish with Parmesan cheese and decorate with fresh parsley and spring onion leaves. We wish you a good one.
